Sesame Noodle Salad
16 oz. lo mein noodles, spaghetti, vermicelli, etc.
1 cup chopped vegetables (bell peppers, broccoli, zucchini, carrots, snow peas, scallions etc.), steamed if desired
1/2 cup sesame oil
3 Tbsp cup soy sauce
3 Tbsp rice vinegar
1 tsp hot pepper flakes, or to taste OR dash of lime juice
1/4 cup white sugar
2 Tbsp honey or to taste
1 Tbsp sesame seeds
Cook pasta according to package directions to be al dente. Drain and rinse. (This may be served hot or cold, so chill noodles if desired.)
Combine dressing ingredients. Add to pasta and mix thoroughly. Stir in vegetables and sprinkle with sesame seeds.
