Ingredients:
Cake:
1.75 cups all-purpose flour
1/2 Tbsp lemon zest
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup extra virgin olive oil
3/4 cup honey
1/4 cup brown sugar
3/4 cup buttermilk
Glaze:
1/2 cup powdered sugar
1 Tbsp lemon juice
1 Tbsp olive oil
Directions:
Preheat oven to 325º F.
Combine flour, zest, baking soda, baking powder, and salt in a bowl and set aside.
In a separate bowl, combine eggs, oil, honey, sugar, and buttermilk. Whisk until frothy.
Fold wet ingredients into dry ingredients. Mix just until blended; do not overmix.
Bake 50 to 60 minutes.
Combine the glaze ingredients and pour over cake after it has cooled. Decorate with adorable little bees if desired.
