Honey Olive Oil Cake with Lemon Glaze

Ingredients:


Cake:

  • 1.75 cups all-purpose flour

  • 1/2 Tbsp lemon zest

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 2 eggs

  • 1/2 cup extra virgin olive oil

  • 3/4 cup honey

  • 1/4 cup brown sugar

  • 3/4 cup buttermilk


Glaze:

  • 1/2 cup powdered sugar

  • 1 Tbsp lemon juice

  • 1 Tbsp olive oil


Directions:

  • Preheat oven to 325º F.

  • Combine flour, zest, baking soda, baking powder, and salt in a bowl and set aside.

  • In a separate bowl, combine eggs, oil, honey, sugar, and buttermilk. Whisk until frothy.

  • Fold wet ingredients into dry ingredients. Mix just until blended; do not overmix.

  • Bake 50 to 60 minutes.

  • Combine the glaze ingredients and pour over cake after it has cooled. Decorate with adorable little bees if desired.
