Butter Honey Almond Cookies

Makes 24 cookies


Ingredients

  • 1 1/2 cups all-purpose flour

  • 1/4 cup almond flour

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup (1 stick) butter

  • 1/2 cup sugar

  • 2 Tbsp honey

  • 1 egg

  • 1/2 tsp vanilla or almond extract


Directions

  • Preheat oven to 350º. Line a cookie sheet with parchment paper.

  • Combine dry ingredients in a bowl.

  • In a mixer, cream butter and sugar. Add egg and mix. Add honey and extracts and mix.

  • Add dry ingredients to wet ingredients and mix.

  • Roll into 1-inch balls and flatten slightly with a fork to make a fun cross-hatch pattern.

  • Bake 9 minutes or until golden.

  • Allow to cool for 2 minutes before removing from cookie sheet.
