Butter Honey Almond Cookies
Makes 24 cookies
1 1/2 cups all-purpose flour
1/4 cup almond flour
3/4 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter
1/2 cup sugar
2 Tbsp honey
1/2 tsp vanilla or almond extract
Preheat oven to 350º. Line a cookie sheet with parchment paper.
Combine dry ingredients in a bowl.
In a mixer, cream butter and sugar. Add egg and mix. Add honey and extracts and mix.
Add dry ingredients to wet ingredients and mix.
Roll into 1-inch balls and flatten slightly with a fork to make a fun cross-hatch pattern.
Bake 9 minutes or until golden.
Allow to cool for 2 minutes before removing from cookie sheet.
