Gingerbread Cake

  • 1/2 cup brown sugar

  • 1/2 cup butter

  • 1 large egg, beaten (or 1/4 c. egg replacer)

  • 1/2 cup unsulphured molasses

  • 1/2 cup honey

  • 1 cup applesauce

  • 2 1/2 cups all-purpose flour

  • 1 1/2tsp baking soda

  • 2 tsp ground cinnamon

  • 2 tsp ground ginger

  • 1/2 tsp ground cloves

  • 1/2 tsp nutmeg

  • 1/2 tsp salt

  • 1 cup very hot water


  • Preheat oven to 350º. Grease a 9x13 or loaf pan with shortening.

  • In a large mixing bowl cream together the sugar and butter until smooth and light.

  • Add the egg, honey, molasses, and applesauce and mix well.

  • In a separate bowl mix the dry ingredients together.

  • Add dry ingredients to the wet mixture and stir to combine. Slowly pour in the hot water and stir until smooth (batter will be thin).

  • Pour batter into prepared pan and bake until a toothpick inserted in the center of the cake comes out clean. A 9x13 pan will take about 35 minutes; a loaf will take about an hour.
