1/2 cup brown sugar
1/2 cup butter
1 large egg, beaten (or 1/4 c. egg replacer)
1/2 cup unsulphured molasses
1/2 cup honey
1 cup applesauce
2 1/2 cups all-purpose flour
1 1/2tsp baking soda
2 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp salt
1 cup very hot water
Preheat oven to 350º. Grease a 9x13 or loaf pan with shortening.
In a large mixing bowl cream together the sugar and butter until smooth and light.
Add the egg, honey, molasses, and applesauce and mix well.
In a separate bowl mix the dry ingredients together.
Add dry ingredients to the wet mixture and stir to combine. Slowly pour in the hot water and stir until smooth (batter will be thin).
Pour batter into prepared pan and bake until a toothpick inserted in the center of the cake comes out clean. A 9x13 pan will take about 35 minutes; a loaf will take about an hour.
